  1. Of modern environmental importance, beet sugar has a lower water footprint than can sugar, though bakers and other prefer to use cane sugar when they can get it.

    It’s amusing to compare this to Sam Taylor’s account of the difficulty John Taylor and his peers had getting the French to share the “secret” of producing sugar from beets, as recounted in John Taylor: The Last Pioneer. Don’t know the page number off the top of my head.
